Mongoose Coffee, also known as Kopi Luwak or civet coffee, is a unique and highly sought-after beverage originating from Indonesia, including the island of Bali. This coffee is produced using beans that have been eaten and subsequently excreted by the Asian palm civet, a small, nocturnal mammal native to the region. The civets consume only the ripest coffee cherries; during digestion, the beans undergo fermentation, altering their chemical composition and enhancing their flavor profile. After being collected from the feces, the beans are thoroughly cleaned, dried, and roasted to produce a coffee renowned for its smooth, rich taste with reduced bitterness. Due to its labor-intensive production process and limited availability, Kopi Luwak is considered one of the most expensive coffees globally. However, ethical concerns have arisen regarding the treatment of civets in some production practices, leading to a preference for beans sourced from wild, free-roaming civets to ensure animal welfare.
